Don't ditch Exchange.

That's basically the only sane answer. You can try things like SuSE
OpenExchange (recently open sourced by their upstream), OpenGroupware.org
and so on, but they're all somewhat suboptimal. If you can live without a
FOSS solution, you can try Samsung Contact (previously HP OpenMail) or
Novell's Groupwise.

Don't ditch Exchange. In fact, some good Exchange training will get you much
further than the current crop of FOSS alternatives.

And if you stick with Exchange, use 2000 or 2003. It's much better, plus you
can use the recently open sourced Exchange Connector for Evolution with it.
