But who is there to trust with the Linux kernel? There is not
one person there, there is a *lot* of people contributing. And Linus
doesn't read every line of code in Linux.

Who? Yourself? If you use a vendor kernel you can blame the vendor. 
Who in theory, is at least an entity that can be blamed (I would say
sued but IANAL, and don't really want to get into an argument
over wether you can sue for buggy code).

With the Linux kernel there is noone to blame. And if you *change*
the kernel (i.e: by removing code), then the only person left to 
blame is yourself. Now, you might be happy with that responsibility,
so I guess that is fine. In any case, I know I'd trust the Redhat kernel
team over myself anyday, but I guess you are more expereince at this kernel
hacking stuff than me.
