Possibly out-of-scope for what you are doing, but I recently had a look at the IBM blade servers. They are very quiet compared with the 1u pizza boxes, mainly because the blower is bigger and doesn't have to run as fast as the little 1U fans have to achieve the same cooling effect. There is also a muffler available if you need to get it even quieter.
Then again, if your computer room is too hot, everything will be noisy. Bring the temperature down to you-need-jacket level and it all quietens down remarkably.
