I tried "data acquisition" linux and got:

comedi - http://www.comedi.org/ which seems to be pretty healthy,
but I'm not sure if it's what you're after.

linuxlab and samplin, which seem to be abandoned.

of course, if you want to consider commercial software,
there's also the well regarded labview:
