I think you need to determine how many machines will be on the network, how many are likely to be on the phone at any time, and how much other traffic there will be. (And to try to predict this over the lifetime of the system if they expect any growth.) 802.11 carries a couple of voip channels quite happily but if you have a lot of other traffic it may degrade badly...
