tcpdump, then adjust scripts accordingly. Most (all?) RTP
implementations can either have their RTP ports manually set, or use a
small fixed range of ports which you can adapt QoS with.

Alternatively, dont Qos based on udp ports, but instead base it on
Diffserv bits. Pretty much every SIP client sets these correctly, and
conversely, regular apps generally dont falsely ask for low delay, etc.
