Possibly a man who replies to himself is more worthy of contempt, I'm not sure..
In short, after more discussion with Ashley, I've realised that that dialog doesn't help. As Ashley said, it lets you change existing mappings but not add new ones; and the dialog Firefox presents merely tells you what app it's about to use, it doesn't allow you to choose anything.
