I don't know about editing /etc/mtab, but my /etc/fstab line looks like this:

/dev/md3  /tmp  reiserfs  
noatime,nodiratime,notail,nodev,nosuid,noexec,user_xattr  0 2

The 'noexec' option is the one we're talking about.
