I don't know what each field means, but I know for sure that the bits across the wire is going to be even harder to calculate if you factor in SSH compression and overhead... I would think you would be best off with some sort of total interface bytes or something (protocol analyzer - eg ntop) to get a decent idea. I have been doing this sort of thing for ages, and resort to rules of thumb and estimates at best - as the interaction between the files, ssh, rsync and the like make it hard to tell for sure...
