Hello, I have two situations with basically the same question:
1. A few weeks ago I tried to install Debian Etch from a net install disk using a repository served through apt-cacher but couldn't find a way to overwrite the sources.list file during the install. I ended up using a full installation disk for the basic install before configuring it to use the apt-cacher repository. 2. I expect to have to install another machine in a couple of weeks and would like to make it use the mirror at my ISP (both faster and doesn't count towards my cap). Googling around and reading through the installation guide haven't mentioned such an option, the closest I found in the guide was that you can adjust these settings after the install is over.
