Expand the squashfs from the cd to a live ext3 file system, chroot into
it and remove ubiquity.

Then recompress, generate a new iso with the new squashfs, and you're

Or use the Debian live cd. Last time I looked it wasn't installable... of course this may have changed, I haven't looked for some time.

On the other hand, if you really want Ubuntu but the chrooting etc seems a bit technical, you could just use reconstructor, which is a gui that allows you to make changes (such as remove ubiquity) and takes care of all the iso creating, chrooting etc for you. Just point it to your ubuntu iso, follow the prompts and burn the new iso it creates.
