Hi Chris,
If you don't mind editing text files you can go to /etc/apt and edit
sources.list by placing a hash (# shift 3) in front of the lines that
begin "deb cdrom ".
If you really prefer a gui go to system-administration-software sources
and untick the cdrom entries (probably under the "third party software" tab.
