I can second that. With a blank xorg.conf, Ubuntu defaults to the nv driver, even if you have the nvidia driver installed. Was bitten by that recently, so it's fresh in my mind. While I've never done SLI, it's unlikely that the nv driver would support it well. I do know that SLI is supposed to work properly on the proprietary driver, so it is really important that you get it working. So yeah, follow Jeff's suggestion of running dpkg-reconfigure to get an xorg.conf, which should hopefully detect the nvidia driver for you. Failing that, you can use the nvidia-xconfig utility, which should do a similar job, but will definitely prefer the nvidia driver. Because you use SLI, you probably want to enable it in parameters to nvidia-xconfig. Try `nvidia-xconfig --sli=Auto`. If you're not unlucky enough to also have the watered down Python version of the command on your system, it should adjust your xorg.conf fine.
