Oh right. I think I just figured it out. 

In Gnome's "System->Preferences->Keyboard Shortcuts", I can set custom
shortcuts. 

This obviously means that menu item shortcuts are controlled in one
central location (I'm used to the MS Windows way of configuring
shortcuts). Heh.
