[SLUG] multi channel sound hardware for recording

I have a need to record several microphones - possibly up to 8 inputs 
for later mixing.

Does anyone have any thoughts about suitable hardware? I have never done 
more than 2 channels (stereo) previously. And while on the subject, is 
"Ardour" as good as some people say it is?
