Oh, but those other variables do exist:

$ env | grep _FORMAT
SINFO_FORMAT=%9P %5a %8s %.10l %.6c %.6z %.7D %10T %N
SQUEUE_FORMAT=%.18i %.10u %.8a %.10j %.10P %.6q %.5D %.12l %.10M %.4t %.20S
