I would be very interested to see if anyone has managed to successfully use APs with more than 3 channels per site. But I don't think it is likely unless there is good shielding between APs. Like perhaps a building. This is why there are other solutions designed for more subscribers like Trango or Canopy. Other option I believe would be locating more APs but at a site that is perhaps a half mile away. Scalability at 802.11 is a problem.
