For SDC you should probably grab stuff explicitly intended for SDC just
to be safe, e.g.
http://us-east.manta.joyent.com/Joyent_Dev/public/builds/platform/master-latest
http://us-east.manta.joyent.com/Joyent_Dev/public/builds/platform/master-20150904T120253Z
http://us-east.manta.joyent.com/Joyent_Dev/public/builds/platform/master-20150904T120253Z/platform/platform-master-20150904T120253Z.tgz
Also I believe SDC has a tool explicitly intended for consuming a
platform tarball and updating GRUB accordingly.
I would do it that way if you're using SDC.

Ok, this is probably a stupid question, but looking at the usb-latest image, I
see this
mackermit:/Volumes/HEADNODE % find os/20150903T074100Z/platform/
os/20150903T074100Z/platform/
os/20150903T074100Z/platform//i86pc
os/20150903T074100Z/platform//i86pc/kernel
os/20150903T074100Z/platform//i86pc/kernel/amd64
os/20150903T074100Z/platform//i86pc/kernel/amd64/unix
os/20150903T074100Z/platform//i86pc/amd64
os/20150903T074100Z/platform//i86pc/amd64/boot_archive.gitstatus
os/20150903T074100Z/platform//i86pc/amd64/boot_archive.hash
os/20150903T074100Z/platform//i86pc/amd64/boot_archive
os/20150903T074100Z/platform//i86pc/amd64/boot_archive.manifest
mackermit:/Volumes/HEADNODE %
Can I just drop that CI platform tarball in there, then write the image to a
USB key and be GTG?
