I’ve only virtualized macOS (and SmartOS, in parallel) using VMware ESXi, which works well and allows passing a GPU through to the Mac, but I’d be quite interested to hear if you can figure out how to run macOS on SmartOS KVM.
Regarding the boot process, have you considered using the Chameleon boot loader? It can boot macOS from legacy BIOS on a PC without virtualization, so I wonder whether it might help with your approach.
