Would you run Node.js, LevelDB (https://github.com/Level/levelup)

These servers are plain HTTP APIs behind an HAProxy front-end.

Is that still a question to ask?
I'd say always go with 64-bit. The advantages of 32-bit (you might
see a small reduction in memory usage) are diminishing fast, and more
and more software is becoming 64-bit only (rust, go, java to name but
a few).
By going all 32-bit you are exposing yourself to a much larger range of
software which could become 64-bit only, and then you are at the mercy
of a greater number of other people's development schedules.
