I had a similar thing where the charts would display but no data would plot on the charts. They just looked empty. Get this when I try to add hosts to a working configuration some times as well. And to fix it, I stop smokeping, delete the *.rrd files for the non working hosts (leaving the others that are working) and then restarted smokeping.
There is also a speedy apache thing that I was told at one time to stop with: pkill -f speedy and then my data began populating the graphs.
