Using Leopard open system prefs and then CDs & DVD's in the hardware  
section, in the bit that says  When you insert a video DVD, from the  
drop down list, choose another application, which would be vlc.
  Alternatively, with a DVD in the drive  and highlighted on the  
desktop, press command i to reveal a get info window. There is an  
option, Open with, and also Use this application to open all documents  
like this. Or.....there are other ways too :)
