Are you just storing all your tracks on the iPod and not on a computer??? Anyways... to make a copy of the mp3s on the iPod download Senuti: http://www.fadingred.org/senuti/ you will be able to pull all your files off the iPod and then your can restore the iPod.
If you have your files on the computer it doesn't matter, you can just restore the iPod and then when you sync the iPod the tracks will copy across from your computer. Does that make sense?
