I have used Data Backup, from ProSoft Engineering (who also produce Data Rescue and other things), and have found it unfailingly good, including for restoring from a n external disc using target mode. It is also good at cumulative backups and boot discs. Be careful of the erase box at the bottom, however: I have found it erasing backups of discs I no longer had mounted and it took me some time to spot the source of the problem!
