No specific experience of the Adobe e-learning suite although I do use
Parallels Desktop and have been pleased with how well it performs
using XP compared to my wife's XP laptop so much so that she's trying
to get a MacBook with virtualisation to replace her laptop.

You might take a look at Sun's free VirtualBox - http://www.virtualbox.org/
- to see if that meets your needs?
