You should take a look at DictUnifier - tutorial here http://davidtse916.wordpress.com/2008/01/24/adding-dictionaries-to-the-built-in-dictionary-application-in-leopard/ that explains how to use it.
Could be the answer to your needs. Certainly I will be using to add a proper UK dictionary.
