Version 12.0 on G5PPC Mac
Format/ Cells/Number/Currency/
Then Symbol £ (pound sterling)
to 2 decimal places.
Excel applies the format, I save and close, on re-opening the £ is now
$.
So
I cleared all formatting, went through the steps above, same result.

There must be some reason for the problem, but from your description
it does seem weird.
What do you mean by "re-instating" the £ sign?
Altering or creating a custom number format?
Using Format/Number/Currency on the relevant cells?
Or anything else?
If you tell me what you have done, I have various versions of Excel
available to double check it for you.
