I recommend ScreenFlow (http://www.telestream.net/screen-flow) - records any
number of monitors with perfect quality, with (optionally) audio from computer
and/or microphone, and video from iSight; tracks keyboard and mouse movement;
and has excellent post-processing capabilities.
A very good solution if you just want to record some stuff happening on the
screen and dump it as a movie; a superb solution if you want to do complex things.

I've used iShowU, http://www.shinywhitebox.com/home/home.html, to grab video
from the screen of my iMac to use as illustrations in presentations and the
results have been surprisingly good. Looks like the thing you need.
