Sounds like you've been bitten by the hard drive swap temperature sensor 
monster. If the hard drive you install doesn't have a compatible connector for 
the temperature sensor included then the fans will run at full speed.

What model of Mac is it in? My MacBook Pro 5.3 15" works fine with my crucial 
SSD.
