Hi Jonathan You'll need to replace more than 1 disk in the Drobo set to see an improvement in disk space, minimum 2 but ideally all of them. The data needs to be duplicated on another drive, so increasing just 1 drive to 2TB will give more space to hold files but no extra space to keep a copy of those files on another disk.
