If you have a MobileMe account you can copy/download documents/spreadsheets to/from your iDisk and can delete them locally on the iPad. As far as I'm aware you can also do that with any WebDAV service, but not currently with Dropbox which would be really useful if they provided a WebDAV connection as many, many Dropbox users are voting for. Not sure how you're password protecting from within Pages/Numbers.
