Personally I think it is the server side that is doing this most likely.

I know you write that the settings for all four of your accounts are the same 
and only one is doing this, I still think that you need to really check the 
settings for that account with 1and1.

I don't know anything about 1and1 so I don't know about what software they use. 
Many ISPs today just use the Google account system, I wonder if 1and1 do?

If you can't see anything funny yourself with the 1and1 set up then I'd phone 
them.

The only possibility I can think of with regard to Mail is that maybe there is 
a confusion about which mailbox is assigned to trash and which is to sent. But 
I think its far more likely to be a problem with the setup with 1and1.

So, my first port of call would be to check again 1and1 settings, my second 
would be to phone them.
