Hi Nick,

I haven't used File menu options to move documents, but a way to get your Pages 
documents in iCloud and out is:

1) Locate your Pages document in the Finder which you wish to place in iCloud
2) Launch Pages
3) Select File > Open
4) Select the iCloud button at the top of the Open document dialog
5) Drag the Pages document from the Finder into the Open dialog to move it to 
iCloud. Dragging it with the Option key (Alt) held down will copy your document 
to iCloud instead. Copying or moving from iCloud to your Mac is achieved in the 
same way.

Right clicking on a document in the iCloud dialog gives you other options too.

I finally bought the latest version of Numbers for iPad and for the Mac when 
Mountain Lion was released and the transfer of spreadsheets between them using 
iCloud makes me glad I waited until Apple did it right - it's lovely. :)
