If its on terrestrial tv, then record it with eye-tv for mac.  It keeps the
original quality,  then trim and share the digital file to youtube.
 Youtube will convert it automatically.

If its going to be on a payed for channel, then record it on your skyplus
or tivo set-top-box, then make an analog recording, the quality will be
lower but still acceptable, but its much more hard work, and more to go
wrong.  The eye-tv digital route is literally two clicks of a mouse, simple
as can be.
