It could be that (assuming you're using the latest version of Numbers and you 
previously used iWork '09) the functionality has been removed or moved. Plenty 
of people complained that things were no longer available but it was just the 
case that Apple had moved them!

Also, you won't be able to open the document with iWork '09 if you've already 
opened it in the latest Numbers and you will have to restore from a backup.

As I'm not familiar with the functionality you've lost I can't be of much more 
use ...
