Thanks all for the input, and yes I probably will buy another 3TB hard drive.
FYI the issue has been resolved as follows: After the 52 hrs of waiting I 
powered the machine down, (Keyboard not functioning during the stalled update.) 
I left the machine for 15 minutes, powered it back up and it went straight into 
the OS X update again, but this time there was a time on the update scale and 
it said there were 18 minutes to go, so I waited and sure enough the Yosemite 
update completed and all appears to be well.

You usually can interrupt an OS X installation, it’ll reboot and pick up where 
it left off. That being said it’s best to give it at least 48hours, could be a 
bad block on the hard drive which might slow things down.
