You can switch off the all mail folder from appearing over IMAP : Gmail.com > settings > labels > untick all mail
I think in Mavericks and later that this causes problems though if you want to upload emails to the inbox as Mail will automatically try and upload them to the All Mail folder as well but if it's switched off then can't find the mailbox. Try it and see if you get any errors, then switch it back on if necessary.
