Sounds like Apple Mail is using its own sent mail folder instead of Google's.
Select the [Gmail] > Sent folder and go to the Mailbox menu > Use this Mailbox
for > Sent

Hi

I use IMAP Gmail on Mac (Apple Mail) and iPhone (Apple Mail app, not Gmail app)
and can't get the Sent folder to properly sync.

In short, if I send something from my iPhone, it doesn't appear in my Sent
folder on the Mac - but if I go to Gmail webmail in Safari, the Sent folder has
everything sent across all my devices.

Any ideas please? Have I missed a Preference setting somewhere in Mac Apple
Mail?

Thanks

Adam
