The backups are held in ~/Library/Application Support/MobileSync (maybe in a
folder called backups in there).
If you move (hold cmd while dragging) that folder to your NAS then use the ln
-s <source> <destination> command in terminal you can make a symbolic link from
where the folder used to be to your NAS drive.
iTunes won't know the difference unless if your NAS drive isn't mounted on the
desktop if you open iTunes and run a backup, you'll most likely get an error.
It'll be slower than usual if it's wireless though. I'd do the first one cabled
in if possible.
I use this to keep my Steam games library on an external drive, I just switch
on the drive when I have a spare moment to play games. It doesn't get much use
;)
I'd also look at why you have such little free space on your Mac, is it a small
SSD? If not then upgrade to a 500GB SSD quite cheaply with the Crucial BX100.
