I believe this will be a web page styling issue. The iOS browser on an iPhone overrides the website’s styling of phone numbers. The intent is to make them stand out. But if the page’s background colour is too similar the phone number looks like it’s disappeared. Same thing happens for form buttons sometimes, and even for some types of text markup.
The onus is really on the website creator to test this and override the iOS browser’s action if it’s causing an issue. A lot of WordPress developers probably wouldn’t consider testing and doing this. They’ve used WP so they don’t have to write code. That would be my best guess.
