I’ve noticed recently that apps will ask permission for stuff when you
first run them as opposed to during the install.  App x would like to
access your documents folder would you like to allow this? yes/no

Only apps with an installer would typically ask, I’ve installed stuff in
the last few days and have been prompted for credentials, so maybe just you
haven’t installed any “big” apps like Adobe or ms Office suite.

Typical “little” apps where you just drop them into applications folder and
go don’t usually prompt for credentials as they don’t usually require any
extra permissions.
