Best way of migrating these days is direct from phone to phone via WiFi, as 
long as both iPhones are on iOS later that 12.4.1 (I think).

Switch the new one on and follow the migration instructions, the old phone 
should recognise there’s a new phone and offer migration as an option onscreen.

You can also back up the old phone to iTunes via USB, or in Finder on Catalina, 
just make sure to encrypt the backup and it’ll migrate over your passwords.
