The built in migration assistant will work over wifi (bluetooth would take 
months to migrate) but the best way is to back up your old Mac to an external 
USB drive using Time Machine, then plug the drive into the new laptop and 
migrate from that.

It’s easier to migrate everything then delete apps you don’t need, or during 
the migration process you can untick Applications and it won’t transfer them.
