I have far more experience of this than any human should, and I recommend otter.ai. (https://otter.ai). but do you want timestamping (ie to create subtitles)? Because a transcript won't do that...You could also see what Youtube is like at this (I've used Zoom - which now uses otter anyway -, Teams and a few others, but not Youtube).
