Hi Phil, sorry to hear this and not quite sure I can offer more than 
sympathy - only that  I experience exactly the same.

The only 'fix' I've managed is that using the newest Apple BT keyboard and 
mouse (the sealed rechargeable as opposed to removable batteries) and 
upgrading to Monterey. I realise that might not be possible for your setup, 
but it has essentially fixed it in that I can't remember the last time it 
disconnected.

In relation and by comparison, my older Apple BT mouse and keyboard 
(replaceable batteries) works far more reliably (albeit not 100%) with our 
family iMac running Catalina.

Sorry I can't be more help and realise updating OSX might not be an option. 
Hope you can resolve.
