Another 👍 for Apple Notes.  I think it’s a deceptively simple app. Apple have added a slew of features over the years which mean that you can still just use it to add simple notes in the most basic manner if that’s all you need or nest them in multiple folders , add tags, smart folders, images, links to other notes and much more if you really want. I think it’s great and keeps its features well out of the way if you don’t need them.
