Low Fat Turkey Salad

My sister Bambi came up with this recipe as a way of using leftover turkey. Those on a low fat diet will appreciate it falling within the diet's guidelines. Everyone will appreciate its delicious taste!

1 C leftover turkey, chopped
1 C low or no fat cottage cheese
2 hard boiled eggs, chopped
1/3 C light mayonnaise
1 tsp. lemon pepper blend
1/4 tsp. salt
1/4 C celery, diced
1/2 C low fat sharp cheese (such as cheddar), shredded

Chop first six ingredients together finely (or use a food processor). Mix in 1/4 cup finely diced celery and 1/2 cup of shredded sharp cheddar cheese. Use as sandwich spread, or stuff Belgian endive leaves.
