One important thing to realize with v-tails it that the moment arm (the
distance between the rotating force and the axis it rots aroung) is long,
which makes it work well for the yaw and pitch axes that you want from a
vtail, since the moment is the distance from the vtail to the pitch and yaw
axis, way up by the wing. The moment for the roll axis that you DONT want is
only from the center of lift of the vtail to the roll axis, a few inches
away, so doesnt have much leverage! There IS as much roll force as you would
expect, but it doesnt get the leverage it needs to roll the plane, while the
pitch and yaw you DO want get plenty of leverage, so win out over the roll.

Or, at least thats how I've always understood vtails to work.
