Assuming you dont' have ailerons, wouldn't it be similer to plug the rudder
servo into channel 1 (the aileron channel), and use elevon mix instead of
v-tail?
I don't know a huge amount about the Flash 5 (my friend has one), but one
problem I assume you will encounter with the method you are using is that
the aileron trim level will not work for the rudder (since, although the
aileron and rudder may be mixed, the trim isn't, or at least it shouldn't
be). You will have to use the rudder trim on the left stick. Using elevon
mix and the rudder servo plugged into channel 1 should solve that.
