Actually, it's not the light which is making the servo twitch. It's the arc from the switch. When you switch off the light, the switch is interrupting the electrical current. When it does this there is a minimal arc. An electric arc is quite electro/magnetically noisy. The first intentionally sent and received radio waves were generated by an arc.
